Chicken Chimichangas
Chopped cooked chicken
Chopped onion or 3 green onions chopped
Chopped garlic
Saute the amount you need in a little oil until vegetables are limp.
1 small jar of Salsa homemade or prepared
1 t. oregano
1/4 t. cumin
Mix in to above. I also added some sliced black olives.
Grease a 9 x 13 pan. Put a spoonful of the above mix into a flour
tortilla, then wrap up. (I also added a spoonful of cooked pinto beans
and some grated cheese.) Fold up and put seam side down in the pan. Brush
with melted butter on all the sides showing. Bake at 375 for 15 minutes.
Broil quickly a couple of minutes. So good! You can also freeze these.
